Chef Justin Pepe has traveled the world cooking and advancing his skills in culinary arts. He’s worked at the Fairmont Company in Lake Louise, Westin Group in the Cayman’s, Cin Cin and Blue Water Café in Vancouver, spent some time as a winemaker, and was an apprentice under red seal Chef Alistair Veen. It’s clear that Chef Justin Pepe has an incredible depth in his cooking knowledge and has brought his skills home to Niagara.

I tried the Duck Confit and Braised Lamb Shoulder. It took me 30 minutes from start to finish. Both were incredibly flavourful and something you’d expect at a high end restaurant except it was all done at home and for $35 instead of $100. The instructions make it incredible simply to cook and plate like a real chef.
